I still wonder why I like Italian cuisine so much. Is it the smell of the herbs, the goodness of the olive oil or the lovely cheese which is used in almost every recipe. As a kid I thought I would grow up and live on pizzas and cheese macaroni every single meal. Well, I still can if not for the weighing scale which threatens to explode if I do so. But now I have discovered a few healthy Italian Recipes. But, if you really want to enjoy Italian food, you need to be generous with the use of olive oil, butter and my favourite...the cheese.
Here's the recipe of Pomodoro sauce. It is so tasty that you can lick the jar off. And you can also preserve it and use it for your pasta's and pizza's whenever you please.
Ingredients
Blanched and deseeded tomatoes 500 gms
Diced onions 50 gms
Basil leaves 4 no.s
Extra virgin olive oil 10 ml
Salt and pepper to taste
Rostaed carrots(optional) 2 no.s small
Whole garlic 5-6 pods
Veg Stock just enough to get the sauce consistency
White Wine a few spoonfuls
Method
Heat olive oil n butter
Add the carrots and roast it ( use carrots for this recipe only if the tomatoes are not sweet)
Remove from heat and blend it in a mixer along with the tomatoes.
heat olive oil in a sauce pan and
add garlic and onions
season it with salt and add basil
add the tomato puree to this
season it with salt and pepper again
now add the stock and wine
simmer for 15 minutes and remove from heat
Great for Pasta and Pizza Sauce! Use a generous helping of Parmesan cheese before serving.
Tips:
Always use fresh garlic and crush them with your knife just before adding them to the sauce
always let the wine cook a few minutes.
Use sweet tomatoes, if you cant find sweet tomatoes then add carrots or beets or pears.
Use fresh basil leaves.
Add salt while cooking and not in the end.
Use yellow onions.
